- USAGE: Rehydrate for 20-25 minutes in water or a mix of one-third must and two-thirds water, using ten times the strain's weight. The mixture should be 38-40°C (100-104°F). Stir for 20 minutes. Gradually add the culture media to three times the must's weight, then wait 10 minutes. Add this mix to the fermentation tank, ensuring the temperature difference is no more than 10°C, ideally 5°C.
- This strain guarantees a fast start of the fermentation process, good alcohol resistance (till 15% vol.), complete and regular fermentation kinetic (within 17-30°C / 64-86°F), low volatile acidity and acetaldehyde production under suitable nutritional conditions.
- This strain enhances the softness and roundness of full-bodied wines by optimizing light tannins. It's ideal for Bordeaux grapes, bringing out "cut herbs" aromas in Cabernet Sauvignon and "ripe fruit" notes in Merlot. Tailored to international markets, it produces full-bodied, low-astringency red wines with complex aromas that blend with oak flavors, creating a unique organoleptic profile. This can add character to lighter wines, making them stand out.
